YUMZILLA... green spinach n shrimp enchiladas

i got several requests for these bad boys via f/b


so if you want the recipe, you have to read more ;)

i don't really measure, so this is all approximate...

1 whole onion chopped
1-2 cups fresh spinach cut into strips
1 lb pre-cooked shrimp (tails removed)
2 tablespoons chopped garlic
2 tablespoons butter
garlic salt to taste
1 can green chile enchilada sauce
corn tortillas
shredded cheese
vegetable oil


Place a large pan over medium heat and melt butter.  Add garlic and onion to butter and allow onion to get soft and transparent.  Add in spinach and let cook down then add in shrimp and cook for just a few mins (since shrimp is pre-cooked) then set aside. 


in a small pan heat up some vegetable oil over low/medium heat.  Run each side of your tortilla thru the oil for just a few seconds, take out and set into an oven safe pan (the oil helps the tortilla be more pliable so it won't break when you roll it).  Once the tortilla has cooled enough to touch add in about 2 tablespoons filling and some shredded cheese.  Then roll into enchilada shape.  Repeat until you use all your mix (makes about 10).


If you feel like making your own green chile sauce then go ahead ;) if not... heat up a can of green chile enchilada sauce for just a few mins, then poor over enchiladas and top w/ shredded cheese.


Put in a 350 degree oven for about 10 mins or until cheese is melted.  Serve w/ a side of mexican rice ;)
